Couscous

The technique

• Couscous forming machine for mixing raw materials and water using a mixing tank.

• Selection of fresh couscous by drum ("rouleuse") with stainless steel mesh sectors, differently sizes, operating in a thermostatic environment.

• Steam cooker, with saturated steam cooking function.

• Product selection before drying.

• Drying section with rotary drum dryer.
The sectors, assembled on central shaft, allow the constant movement of the product.
The high permeability of the stainless-steel sectors allows an efficient management of air flow and the reduction of energy consumption.
The high efficiency of the ventilation system and the technological managing allow the production of a product of the highest quality.
The dryer is equipped with a system for dusts collection.

• One-way cooler, made with aluminum metal belt and stainless-steel mesh.
The closed-circuit ventilation system and the high permeability of the conveying system provide excellent product cooling and reduced energy consumption.

• Final selection, after the cooler, able to select with a plansichter the different product sizes.

• Electrical control panels are built according to the highest quality standards available on the market.

• Maximum level of automation, for PLC process control and PC supervision.

The technology

This kind of equipment is the effect of years of research on the process, cooperating with technicians and technologists with a great experience on couscous industrial production. The end result consists in technical solutions aimed to get the maximum equipment reliability, combined with the best product quality.

Couscous forming phase, made with “rouleuse” inside a controlled temperature environment, guarantees stability to the process since the beginning.

Subsequent steam cooking is operated in a homogeneous way, controlling temperature in various steps.

High-temperature drum dryer, with central shaft, is ideal to dry the product, keeping it in continuous movement and optimizing the achievement of the drying parameters’ set point.

The highly efficient ventilation can be single or double, in both cases, assuring a proper airflow through the product, with a homogeneous drying and, not less important, a significant reduction of energy consumption.

The last stage of the process, after the cooler, guarantees an excellent homogeneity and quality of the final product, thanks to one of the most consolidated and established technologies.
