Cannelloni and special shapes

The technique

• The traditional press performs mixing of raw materials, water and additives required for the kneading, with subsequent extrusion and forming of the product into the desired product shape.

• Automatic device suitable to cut all types of pasta (cannelloni, special short pasta).

• Trays automatic loading system to the shaping machine.

• Trays feed unit.

• Three-level shaker pre-dryer, entirely in stainless steel with high thermal power to obtain an excellent product treatment, designed to prevent any fallings.

• Single tier dryer in various sizes depending on the product.
High permeability of the product transport system, high efficiency of the ventilation system and technological management ensure the production of a wide range of products.

• Drying tunnel (pre-dryer - dryer - stabilization) with vertical modules.
High permeability of product movement trays, high efficiency of the ventilation system and technological management, ensuring a wide range of products realization.

• Cooler with one or more trays.
The closed-circuit ventilation system and the high permeability of the conveying system, ensure an excellent cooling of the product and a reduction in terms of energy consumption.

• Product unloading system and trays cleaning.

• Descender for empty trays.

• Automatic unit for trays drop-down and trays return feeding system.

• Trays for pasta conveying, built with stainless steel external assembly, anodised aluminium profiles and 90 °C thermo-resistant polyester net.

• Electrical control panels are built according to the highest quality standards available on the market.

• Maximum level of automation, for PLC process control and PC supervision.

The technology

Anselmo LTA technology, for the cannelloni and special shapes, is characterized by an innovative drying and product transport system. Thanks to the Anselmo LTA design study, the technological choices are aimed to obtain an excellent product, as well as increasing the systems’ working lives.

The traditional press, with long mixing times and a slow extrusion phase, ensures an excellent product ready for shaping. The flat or inclined cutting system makes it possible to have cannelloni and special shapes of different lengths.

The shaker pre-dryer, appropriately sized, prevents sticking on any short cut pasta shape, even on those made with wheat flour.

After an appropriately timed pre-drying, the cannelloni and the special shapes reach the drying and stabilization stage with consequent final cooling.

Total drying time 8 hours approximately.

Thanks to its simple and intuitive user interface, the fully automated process control management system guarantees an excellent control of all line’s parameters during every process stage. This system allows production lots traceability and production parameters display via Internet.

Shapes combination

The ANSELMO LTA range of automatic production lines allows, in combination with the Lasagne production, to obtain shapes such as Nests, Matasse, Cannelloni and Special Short Pasta.

The different combinations will have a variable hourly production, according to the required shapes. Customization is our strong point, thanks to a technology consolidated in years of experience.
